Buffalo Chicken Night


Hey there! I wanted to share with you, a fun meal that Mackenzie and I love! Health benefits? Absolutely none. Tasty benefits? You bet!

The meal?

Fried chicken, homemade french fries, Franks hot sauce, and ranch.
Perfect for a Friday night and a movie!


I'm sure you're already adding to your cholesterol level just by looking at it!


I did cook the chicken a bit healthier than I normally do. This time, I dredged it in flour, egg, seasoning, and bread crumbs and then baked it. Normally, I fry it. Amazingly, it was still pretty moist after being baked. We both were happy with the outcome.

However, any possible health benefits that were added by baking the chicken, were totally demolished by adding these dipping sauces.

This is Frank's Red Hot sauce. And I must say, it is by far the best buffalo sauce ever! It's a cayenne pepper sauce and guess what you do? Mix it with melted butter! Bring on the grease! haha (FYI, it is very good without the butter as well. You can save yourself from the extra fat by eliminating the butter...but who would want to do that?)

Next up, semi-homemade ranch dressing. In my opinion, this version is much better than the already prepared kind in the bottle. All you do is mix 1 cup milk and 1 cup mayonnaise with the seasoning. And guess what? You can even lower the calories by using 1% or non-fat milk and reduced fat mayo. Anyway, it tastes much better than the bottled stuff. If you haven't tried it, please do!

And look at those fries! They were so good! All I did was slice the potatoes into shoestring like pieces, fry them in olive oil, and sprinkle them with seasoning salt. So good!

Mmmm! Looks so GOOD, Brittany! :o) You're spoiling your DH like crazy ~~ and that's great! No wonder he married you...funny, pretty, smart, AND a good cook! :o) If you do all the cooking, does Mackenzie do the dishes? Or do you both? I would LOVE someone to help me w/mine. I'm the the chief cook & bottle washer in this house.

I actually do both the cooking and the cleaning. We do have different jobs around the house but those two happen to be mine! And, I'm ok with it! However, it is really nice when Mackenzie decides he'll help me out and do the dishes. It makes me feel so good!
